Novello is a red wine, with a low alcohol content, between 11°C and 13°C.
It is made through carbonic maceration, an alcoholic fermentation that lasts 7 to 20 days.
It differs from today’s traditional winemaking technique because it transforms sugar into alcohol without the use of yeast, taking advantage of the self-fermentation process of the grapes in the absence of oxygen.
It allows the production of particularly colorful and fragrant wines with intense notes of berries, strawberry and raspberry.

Description Luca Maroni, 95pts Nebbiolo d’Alba San Lorenzo 2021:
Strong in its intense spice, balsamic and minty, creamy pushes its well-pure cassis aroma.
Great power of sweetness and vanilla, great extractability, ignited power from majestic grade. But its qualifying persuasiveness of perfume does not originate only in the quantity and accomplished ripeness of the fruit, in the quality and intensity of the spice: such a sweet olfactory tendency could not be appreciated but for the implied, excellent enological sharpness of its transformation.
And its great fruit has good residual turgidity. A champion of great rank then, on the palate with mighty tannin and yet harmonious softness, for grapes and production technique, of very virtuous qualitative carat.

Slightly shaded ruby on the rim. The evocative aromatic range opens on perceptions of chinotto, gentian and bramble berries, associated with memories of rhubarb, cinchona and carob. Restless tasting, equipped with pleasant freshness and evolving tannins. Excellent taste-olfactory correspondence.
